Meeting the new USDA/FSIS standards for Salmonella and Campylobacter in poultry

In February 2016, USDA/FSIS issued new standards for Salmonella and Campylobacter in ground poultry meat and chicken and turkey parts. Ashley Peterson, PhD, VP of Science and Technology for the National Chicken Council, talked with Poultry Health Today shortly before the ruling about the new targets and, more importantly, what broiler producers and processors need to do to meet them.
